  • 1 lb ground beef (preferably 80/20 for a juicy texture)
  • 8 oz noodles (rice noodles, egg noodles, or udon noodles)
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon brown sugar
  • 1 tablespoon hoisin sauce (optional for extra sweetness)
  • 1 tablespoon chili oil (optional for spice)
  • 1/2 cup bell peppers, thinly sliced
  • 1/2 cup snap peas, chopped
  • 1/2 cup carrots, julienned
  • 2 green onions, sliced for garnish
  • 1 tablespoon toasted sesame seeds for garnish
  • Fresh cilantro (optional)

Instructions

  • Prepare the Ingredients:
    • Cook the noodles according to package instructions, then drain and set aside.
    • Wash and chop the vegetables (bell peppers, snap peas, carrots).
    • Mince the garlic and grate the ginger.
  • Cook the Ground Beef:
    • Heat a large skillet or wok over medium-high heat and add 1 tablespoon of sesame oil.
    • Add the ground beef to the pan, breaking it apart with a spatula. Cook until browned and fully cooked through, about 7-8 minutes. Drain any excess fat.
  • Add Aromatics and Vegetables:
    • Add the minced garlic and grated ginger to the pan with the cooked beef. Stir-fry for 1-2 minutes until fragrant.
    • Toss in the sliced bell peppers, snap peas, and carrots. Stir-fry for about 5-7 minutes until the veggies are tender-crisp.
  • Season the Dish:
    • In a small bowl, whisk together the soy sauce, rice vinegar (or lime juice), brown sugar, hoisin sauce (optional), and chili oil (optional).
    • Pour this sauce mixture over the beef and veggies. Stir well to coat everything evenly.
  • Combine with Noodles:
    • Add the cooked noodles to the pan and toss everything together until the noodles are heated through and coated with the sauce.
  • Garnish and Serve:
    • Serve the noodles in bowls and top with sliced green onions, toasted sesame seeds, and fresh cilantro (if desired).

Notes

  • Noodles: Feel free to choose your favorite type of noodles. Rice noodles offer a lighter, gluten-free option, while egg noodles or udon provide a heartier texture.
  • Vegetables: Customize the veggies according to what you have on hand. Broccoli, bok choy, or mushrooms work wonderfully in this dish.
  • Spice Level: Adjust the amount of chili oil to your preference. Add more for a spicier kick or skip it for a milder flavor.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stovetop with a splash of water or broth to keep it moist.
