- 8 oz noodles (rice noodles, egg noodles, or udon noodles)
- 2 tablespoons sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar or lime juice
- 1 tablespoon brown sugar
- 1 tablespoon hoisin sauce (optional for extra sweetness)
- 1 tablespoon chili oil (optional for spice)
- 1/2 cup bell peppers, thinly sliced
- 1/2 cup snap peas, chopped
- 1/2 cup carrots, julienned
- 2 green onions, sliced for garnish
- 1 tablespoon toasted sesame seeds for garnish
- Fresh cilantro (optional)
Instructions
- Prepare the Ingredients:
- Cook the noodles according to package instructions, then drain and set aside.
- Wash and chop the vegetables (bell peppers, snap peas, carrots).
- Mince the garlic and grate the ginger.
- Cook the Ground Beef:
- Heat a large skillet or wok over medium-high heat and add 1 tablespoon of sesame oil.
- Add the ground beef to the pan, breaking it apart with a spatula. Cook until browned and fully cooked through, about 7-8 minutes. Drain any excess fat.
- Add Aromatics and Vegetables:
- Add the minced garlic and grated ginger to the pan with the cooked beef. Stir-fry for 1-2 minutes until fragrant.
- Toss in the sliced bell peppers, snap peas, and carrots. Stir-fry for about 5-7 minutes until the veggies are tender-crisp.
- Season the Dish:
- In a small bowl, whisk together the soy sauce, rice vinegar (or lime juice), brown sugar, hoisin sauce (optional), and chili oil (optional).
- Pour this sauce mixture over the beef and veggies. Stir well to coat everything evenly.
- Combine with Noodles:
- Add the cooked noodles to the pan and toss everything together until the noodles are heated through and coated with the sauce.
- Garnish and Serve:
- Serve the noodles in bowls and top with sliced green onions, toasted sesame seeds, and fresh cilantro (if desired).

- Noodles: Feel free to choose your favorite type of noodles. Rice noodles offer a lighter, gluten-free option, while egg noodles or udon provide a heartier texture.
- Vegetables: Customize the veggies according to what you have on hand. Broccoli, bok choy, or mushrooms work wonderfully in this dish.
- Spice Level: Adjust the amount of chili oil to your preference. Add more for a spicier kick or skip it for a milder flavor.
