For the Donuts:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

For the Topping:

  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons melted butter

Instructions

Step 1: Preheat and Prepare

Preheat your oven to 350°F (175°C). Lightly grease a donut pan or use a non-stick spray.

Step 2: Mix Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.

Step 3: Combine Wet Ingredients

In a large bowl, whisk the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, vanilla extract, and milk until smooth.

Step 4: Mix the Batter

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Avoid overmixing to keep the donuts soft.

Step 5: Fill the Donut Pan

Spoon the batter into a piping bag or a zip-top bag with the corner cut off. Pipe the batter into the donut pan, filling each mold about 3/4 full.

Step 6: Bake

Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Allow them to cool for a few minutes before transferring to a wire rack.

Step 7: Coat with Cinnamon Sugar

In a small bowl, mix the sugar and cinnamon. Brush each donut with melted butter and coat with the cinnamon sugar mixture.

Notes

Use a Piping Bag – This makes filling the donut molds cleaner and easier.

Don’t Overmix – Overmixing can make the donuts dense instead of light and fluffy.

Cool Before Coating – Let the donuts cool slightly before brushing with butter so they hold their shape.

Adjust the Spice Level – Add more cinnamon or nutmeg if you want a stronger spice flavor.
