    • 1 cup mayonnaise (full-fat for best results)
    • 1 cup water or brewed coffee (for deeper flavor)
    • 1 1/2 tsp vanilla extract

Instructions

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 9-inch round cake pans. Line the bottoms with parchment paper for easier release.
  2. Combine Dry Ingredients:
    • In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt. Whisk to combine and eliminate any lumps.
  3. Mix Wet Ingredients:
    • In a separate bowl, whisk together mayonnaise, water or coffee, and vanilla extract until smooth.
  4. Combine Wet and Dry:
    • Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix; the batter should be smooth but slightly thick.
  5. Pour and Bake:
    • Pour the batter into the prepared pan(s), spreading it evenly. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool:
    • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

  • Temperature: Ensure all ingredients are at room temperature for smooth mixing.
  • Coffee: Swap water for coffee to enhance the chocolate flavor.
  • Testing Doneness: Check with a toothpick; it should come out clean or with a few crumbs, but no wet batter.
