115g (1/2 cup or 1 US stick) melted salted butter (or unsalted butter with 1/4 tsp salt)
1 cup crushed Arnott’s Marie crackers (about 11 crackers) or graham cracker crumbs (from about 8 crackers)
1 cup icing sugar (powdered sugar)
3/4 cup smooth peanut butter
Topping:
1 cup dark chocolate chips (the melting kind—semi sweet works great)
2 tbsp smooth peanut butter
Instructions
- Butter and line an 8-inch square dish or pan with baking paper.
- Place the base ingredients in a bowl and mix them until well combined. Then press the mixture firmly into the prepared pan.
- To make the topping, melt the chocolate chips and peanut butter together in the microwave using 2 bursts of 30 seconds. Pour and spread the melted topping over the base; you can smooth it out or create swirls if you like.
- Refrigerate the assembled bars until set, about 1 1/2 hours. Remove them from the fridge and allow a slight warm-up at room temperature so the top cuts neatly, then slice into 16 squares or any shape you prefer.
Notes
- Ensure the melted butter isn’t too hot before mixing it with the other base ingredients.
- Press the base mixture evenly in your pan for a firm foundation.
- When melting the topping, work in short bursts to avoid burning the chocolate or peanut butter.
- Allow the bars to chill completely so the layers set well before cutting.
