- For the casserole:
- 4 boneless, skinless chicken breasts (or thighs)

- Salt and pepper, to taste
- Tuscan seasoning (optional but recommended):
- 1 teaspoon basil
- 1 teaspoon rosemary
- 1 teaspoon oregano
- 1/2 teaspoon thyme
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the chicken: Season the chicken breasts with salt, pepper, and the Tuscan seasoning blend. Cut into bite-sized pieces.
- Layer the casserole: In a large casserole dish, spread the creamy garlic sauce on the bottom. Add the seasoned chicken breast pieces in a single layer.
- Add the veggies: Top the chicken with chopped sun-dried tomatoes and fresh spinach leaves. Sprinkle with half of the Parmesan cheese.
- Make the creamy garlic sauce: In a medium pan, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream and add 1/2 cup Parmesan cheese. Stir continuously until the sauce thickens, about 3-5 minutes. Season with basil, oregano, thyme, salt, and pepper.
- Assemble and bake: Pour the creamy garlic sauce over the chicken and vegetables in the casserole dish. Top with shredded mozzarella cheese.
- Bake: Cover the dish with foil and bake for 30-35 minutes, or until the chicken is fully cooked (internal temperature of 165°F) and the cheese is melted and bubbly.
- Serve: Let the casserole cool for a few minutes, then garnish with fresh basil or additional Parmesan cheese. Serve with your choice of side
