  • For the casserole:
    • 4 boneless, skinless chicken breasts (or thighs)
    • 1 cup sun-dried tomatoes, chopped
    • 4 cups fresh spinach
    • 1 cup shredded mozzarella cheese
    • 1 cup grated Parmesan cheese
  • For the creamy garlic sauce:
    • 1 cup heavy cream
    • 1/2 cup Parmesan cheese (for sauce)
    • 3 cloves garlic, minced
    • 1 tablespoon olive oil
    • 1 teaspoon basil (dried or fresh)
    • 1 teaspoon oregano
    • 1 teaspoon thyme
    • Salt and pepper, to taste
  • Tuscan seasoning (optional but recommended):
    • 1 teaspoon basil
    • 1 teaspoon rosemary
    • 1 teaspoon oregano
    • 1/2 teaspoon thyme

Instructions

  • Preheat the oven to 375°F (190°C).
  • Prepare the chicken: Season the chicken breasts with salt, pepper, and the Tuscan seasoning blend. Cut into bite-sized pieces.
  • Layer the casserole: In a large casserole dish, spread the creamy garlic sauce on the bottom. Add the seasoned chicken breast pieces in a single layer.
  • Add the veggies: Top the chicken with chopped sun-dried tomatoes and fresh spinach leaves. Sprinkle with half of the Parmesan cheese.
  • Make the creamy garlic sauce: In a medium pan, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream and add 1/2 cup Parmesan cheese. Stir continuously until the sauce thickens, about 3-5 minutes. Season with basil, oregano, thyme, salt, and pepper.
  • Assemble and bake: Pour the creamy garlic sauce over the chicken and vegetables in the casserole dish. Top with shredded mozzarella cheese.
  • Bake: Cover the dish with foil and bake for 30-35 minutes, or until the chicken is fully cooked (internal temperature of 165°F) and the cheese is melted and bubbly.
  • Serve: Let the casserole cool for a few minutes, then garnish with fresh basil or additional Parmesan cheese. Serve with your choice of side

  • Make-Ahead Tips: This casserole can be assembled ahead of time. Simply cover it and refrigerate for up to 3 days before baking. Alternatively, freeze it for up to 3 months and bake when ready.
  • Chicken Choices: Boneless, skinless chicken breasts are the most common choice, but thighs can be used for a juicier option.
