Instructions

Step 1: Prepare the Fries

Start by preheating your oven to 425°F (220°C). While the oven heats up, toss the potato fries with olive oil, salt, and garlic powder. Spread them evenly on a baking sheet lined with parchment paper. Bake for about 20–25 minutes, flipping halfway through, until they’re golden brown and crispy. These homemade fries are way better than anything from a freezer pack!

Step 2: Make the Batter

In a bowl, mix together the flour, paprika, garlic powder, black pepper, and salt. Gradually whisk in the sparkling water and beaten egg until the mixture is smooth and slightly thick. The key here is keeping the batter cold it helps achieve that extra crispy texture when frying.

Step 3: Fry the Cod

Fill a deep skillet or pot halfway with vegetable oil and heat it to 350°F (175°C). Dip each cod fillet into the batter, letting any excess drip off before gently placing it in the hot oil. Cook for about 4–5 minutes per side, or until the fish is golden brown and flakes easily with a fork. Be careful not to overcrowd the pan; fry in batches if needed.

Step 4: Assemble and Serve

Once everything is cooked, drain the cod and fries on paper towels to remove excess oil. Arrange them on a plate, sprinkle with a bit more salt if desired, and serve alongside your favorite dipping sauce. My go-to choices are tartar sauce or ketchup, but feel free to experiment!

Notes

Keep the batter as cold as possible before frying. This prevents the batter from becoming too soggy and ensures a crispy coating.

Don’t skip preheating the oil properly. If the oil isn’t hot enough, the fish can absorb too much grease and lose its crispiness.

Use high-quality cod fillets they make all the difference in terms of taste and texture.
