For the filling:

  • 3 cups goumi berries (or substitute with strawberries, raspberries, or cherries)
  • 1 cup sugar (adjust depending on berry sweetness)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice

Equipment Needed:

  • Large bowl for mixing
  • Pie pan
  • Rolling pin (or clean bottle)
  • Spoon or spatula for stirring
  • Oven
  • Plastic wrap (for chilling dough)

Instructions

  1. Prepare the crust:
    • In a large bowl, combine the flour and salt.
    • Add the cold butter pieces and use your fingers or a pastry cutter to work the butter into the flour until it looks like crumbs.
    • Slowly add cold water, one tablespoon at a time, mixing until the dough begins to come together. Form into a ball.
    • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  2. Make the filling:
    • Wash the goumi berries thoroughly and place them in a mixing bowl.
    • Add sugar, flour, and lemon juice, then mix well to combine.
  3. Assemble the pie:
    • Preheat your oven to 375°F (190°C).
    • Remove the dough from the refrigerator and roll it out on a floured surface to fit your pie pan.
    • Place the dough in the pie pan, trimming any excess around the edges.
    • Pour the berry filling into the crust.
    • If you want a top crust, roll out the remaining dough, place it over the berries, and crimp the edges together. Alternatively, you can leave the top open for a rustic pie.
  4. Bake:
    • Bake the pie for about 45 minutes or until the crust is golden brown and the filling is bubbling.
  5. Cool and Serve:
    • Let the pie cool for about 20 minutes before slicing to make it easier to cut. Serve as is, or top with vanilla ice cream or whipped cream.

Notes

  • Substitute for Goumi Berries: If you can’t find goumi berries, you can use strawberries, raspberries, or a mix of your favorite berries. The pie will still be delicious, though the flavor will be slightly different.
  • Pre-made crust: If you’re short on time, you can use a store-bought pie crust instead of making your own. Just roll it out and follow the same steps for the filling and baking.
  • Storage: If you have leftovers, store the pie in the fridge for 3-4 days. If you want to freeze it, wrap it well and keep it for up to a month.
