For the crust:
- 2 cups all-purpose flour
- Pinch of salt
- 1/2 cup cold butter, cut into small pieces
- 1/4 cup cold water
For the filling:
- 3 cups goumi berries (or substitute with strawberries, raspberries, or cherries)
- 1 cup sugar (adjust depending on berry sweetness)
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice

Instructions
- Prepare the crust:
- In a large bowl, combine the flour and salt.
- Add the cold butter pieces and use your fingers or a pastry cutter to work the butter into the flour until it looks like crumbs.
- Slowly add cold water, one tablespoon at a time, mixing until the dough begins to come together. Form into a ball.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Make the filling:
- Wash the goumi berries thoroughly and place them in a mixing bowl.
- Add sugar, flour, and lemon juice, then mix well to combine.
- Assemble the pie:
- Preheat your oven to 375°F (190°C).
- Remove the dough from the refrigerator and roll it out on a floured surface to fit your pie pan.
- Place the dough in the pie pan, trimming any excess around the edges.
- Pour the berry filling into the crust.
- If you want a top crust, roll out the remaining dough, place it over the berries, and crimp the edges together. Alternatively, you can leave the top open for a rustic pie.
- Bake:
- Bake the pie for about 45 minutes or until the crust is golden brown and the filling is bubbling.
- Cool and Serve:
- Let the pie cool for about 20 minutes before slicing to make it easier to cut. Serve as is, or top with vanilla ice cream or whipped cream.
Notes
- Substitute for Goumi Berries: If you can’t find goumi berries, you can use strawberries, raspberries, or a mix of your favorite berries. The pie will still be delicious, though the flavor will be slightly different.
- Pre-made crust: If you’re short on time, you can use a store-bought pie crust instead of making your own. Just roll it out and follow the same steps for the filling and baking.
- Storage: If you have leftovers, store the pie in the fridge for 3-4 days. If you want to freeze it, wrap it well and keep it for up to a month.
