- ¼ cup (60g) milk
- 2 tablespoons (30g) unsalted butter, melted
- ⅓ teaspoon (2g) salt
- 1⅛ cups (150g) cake flour, sifted
- ½ teaspoon (2g) yeast
- ¼ teaspoon (1g) baking soda
- ¼ cup (35g) chopped green onions (green parts only)
- 1½ tablespoons (10g) sesame seeds (optional)
Instructions
- Mix the wet stuff: I start by putting milk, melted butter, and salt in a bowl. Then I stir them together.
- Add the flour: I sift the cake flour into the bowl. Then I add yeast and baking soda. I mix it gently but not too much.
- Put in the green onions: Now I fold in the chopped green onions. If you want sesame seeds, add them now too.
- Make the dough: I knead everything together until it forms a nice dough. This takes just a few minutes.
- Let it rest: I cover the dough with plastic wrap. Then I wait for 30 minutes. This helps the dough get better.
- Roll it out: I put the dough between two pieces of baking paper. Then I roll it very thin and flat.
- Cut the crackers: I trim the edges to make them neat. Then I cut the dough into small pieces. I use a fork to make little holes in each piece.
- Bake them: I heat my oven to 338°F (170°C). Then I put the crackers on a baking sheet and bake for 15 minutes until they look golden.
- Cool down: I let the crackers cool on a wire rack. When they are cool, they will be crispy and ready!
Notes
- Make sure your butter is not too hot when you add it
- Don’t mix the dough too much or the crackers will be tough
- The crackers should sound crispy when you tap them
- You can store these in an airtight container for up to one week
