Ingredients

  • 2 large sweet potatoes cut into 8 wedges each
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Avocado mashed, for serving

Instructions

  1. Put the sweet potatoes in a large bowl with olive oil, paprika, garlic powder, salt and pepper. Mix everything together well.
  2. Heat your grill or grill pan to medium heat. Make sure to oil the grates or pan first.
  3. Put the sweet potatoes on the . Cook for 15 minutes until they look a bit charred and feel tender. Turn them over halfway through cooking.
  4. Take them off the grill and serve with mashed avocado if you want.

Notes

  • Cut your sweet potatoes into even wedges so they cook at the same rate
  • Don’t skip the oil – it helps them get crispy
  • Keep the heat at medium to avoid burning the outside before the inside cooks
  • Turn them only once to get nice grill marks
  • Test with a fork to make sure they’re tender inside
