For the Dough:

  • 2 ¼ tsp (1 packet) active dry yeast
  • 1 cup warm water (110°F/45°C)
  • 2 tsp sugar
  • 2 ½ cups all-purpose flour (plus extra for dusting)
  • 1 tsp salt
  • 2 tbsp olive oil

For the Filling:

  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

For Topping:

  • 2 tbsp melted butter
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh parsley (optional)
  • Additional grated Parmesan cheese

For Serving (Optional):

  • Warm marinara sauce
  • Garlic aioli

Instructions

1. Prepare the Dough:

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5–10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix until a shaggy dough forms. Knead on a floured surface for 8–10 minutes until the dough is smooth and elastic.
  4. Place the dough in a greased bowl, cover with a towel, and let it rise for 1 hour or until doubled in size.

2. Prepare the Filling and Toppings:

  1. Mix mozzarella and Parmesan cheese in a small bowl.
  2. In another bowl, mix melted butter with minced garlic and parsley for topping.

3. Shape the Breadsticks:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Punch down the risen dough and divide it into 10 equal pieces.
  3. Roll each piece into a rectangle (about 6×3 inches). Place a tablespoon of cheese mixture down the center of each rectangle.
  4. Fold the dough over the cheese, pinching the edges tightly to seal, and roll into a breadstick shape.

4. Bake the Breadsticks:

  1. Arrange the breadsticks on the prepared baking sheet. Brush them with the garlic butter mixture and sprinkle additional Parmesan on top.
  2. Bake for 12–15 minutes or until golden brown.

5. Serve:

  • Allow the breadsticks to cool slightly. Serve warm with marinara sauce or garlic aioli for dipping.

Notes

  • Make-Ahead: You can prepare the dough and refrigerate it for up to 2 days. Shape and bake when ready.
  • Freezing: Baked breadsticks can be frozen for up to 3 months. Reheat at 375°F (190°C) for 10 minutes.
  • Customization: Add your favorite herbs, spices, or cheeses for different flavor profiles. Try cheddar for a sharper flavor or add a sprinkle of chili flakes for a spicy kick.
