  • 1/2 cup all-purpose flour
  • 3/4 cup granulated sugar (divided)
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 tablespoon lemon zest
  • 2 tablespoons all-purpose flour (for pudding layer)
  • 1/2 cup granulated sugar (for pudding layer)
  • 1 3/4 cups milk
  • 1/4 cup freshly squeezed lemon juice

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9-inch baking dish or ramekins.
  • Prepare the batter:
    In a mixing bowl, combine 1/2 cup flour, 3/4 cup sugar, baking powder, and a pinch of salt. Add 1/2 cup milk, melted butter, and lemon zest. Mix until smooth. Pour the batter into the prepared baking dish.
  • Make the pudding layer:
    In another bowl, whisk together 2 tablespoons flour, 1/2 cup sugar, 1 3/4 cups milk, and lemon juice until well combined. Pour this mixture gently over the batter.
  • Bake for 45-50 minutes, or until the top is golden brown and the pudding layer is set.
  • Let the cake cool for 15 minutes before serving. Enjoy warm or chilled.
