- ½ cup unsalted butter, softened
- 1⅔ cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup light brown sugar, packed
- ½ cup granulated sugar
- 1 large egg, room temperature
- ⅓ cup honey
- ½ teaspoon vanilla extract
- ½ cup sesame seeds
Instructions
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In your large mixing bowl, cream the softened butter with both sugars until light and fluffy, about 3-4 minutes.
- Beat in the egg, honey, and vanilla extract until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Fold in the sesame seeds until evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop rounded portions of dough onto your prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden brown.
- Let cookies cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
Notes
- Make sure your butter is properly softened – it should give slightly when pressed but not be melted
- Don’t overmix the dough once you add the flour to avoid tough cookies
- Toast your sesame seeds lightly in a dry pan for extra flavor before adding them to the dough
- Use room temperature egg for better incorporation into the batter
- Check cookies at the minimum baking time – they continue cooking slightly on the hot pan
- Let the dough chill for 30 minutes if it seems too soft to handle
- Space cookies adequately as they spread during baking
