  • 1 teaspoon baking powder

Instructions

  • Cream Butter and Sugar: In a large mixing bowl, beat the butter and sugar until light and fluffy.
  • Add Wet Ingredients: Mix in the egg, lemon zest, lemon juice, and lemon extract (if using) until well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  • Form Dough: Gradually add the dry ingredients to the wet mixture. Mix until just combined—do not overmix.
  • Chill Dough: Cover and refrigerate the dough for at least 1 hour to firm up.
  • Preheat Oven: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Shape Cookies: Scoop chilled dough into balls and place on the prepared baking sheet, spacing them 2 inches apart.
  • Bake: Bake for 10-12 minutes or until the edges are lightly golden.
  • Cool: Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  • Optional Finish: Brush the tops of the cooled cookies with a bit of fresh lemon juice for an extra citrus kick.
