Instructions

  • Combine Ingredients: In a medium bowl, mix together 1 cup of desiccated coconut, 3 tablespoons of coconut nectar (or maple syrup), and 5 tablespoons of coconut cream until a soft, pliable dough forms.
  • Form Balls: Using slightly damp hands to prevent sticking, shape the dough into 9 golf ball-sized balls. If the mixture feels too dry, add a small amount of coconut cream to achieve the desired consistency.
  • Insert Nuts (Optional): Press a blanched almond or hazelnut into the center of each ball, then reshape to ensure the nut is fully enclosed.
  • Coat with Coconut: Roll each ball in the remaining 1/2 cup of desiccated coconut until fully covered, giving them a “snowball” appearance.
  • Chill: Place the coconut snowballs on a plate and refrigerate for at least 2 hours to firm up and allow the flavors to meld.

Notes

  • Use Fresh Desiccated Coconut: Opt for the freshest desiccated coconut available, preferably from a store with high turnover, to avoid any rancid taste.
  • Chill Coconut Cream: Refrigerate the can of coconut cream overnight and use the thick cream that rises to the top. This thicker consistency binds the ingredients better than the liquid portion.
  • Refrigerate Mixture Before Shaping: If the mixture is too sticky to handle, chill it in the refrigerator for 15-20 minutes to firm it up, making shaping easier.
  • Add a Pinch of Sea Salt: Incorporate a tiny pinch of sea salt into the mixture. This enhances the sweetness and accentuates the coconut flavor.
  • Press Coating Firmly: When coating the balls with additional coconut, gently press the coconut onto them rather than just rolling. This ensures a more even and secure coating that won’t fall off.
