For the Brioche Dough
- ¾ cup (175g) whole milk
- 3 tbsp (40g) unsalted butter, cut into small cubes
- 2 tsp (9g) instant yeast
- 3 cups (390g) all-purpose flour
- ¼ cup (58g) granulated sugar
- ½ tsp salt
- 1 large egg, plus 1 large egg yolk
For the Filling
- ½ cup Nutella spread
For the Raspberry Simple Syrup
- ⅓ cup raspberry jam
- 2 tbsp water
Instructions
- Heat milk and butter to 90°F
- Mix with yeast in a stand mixer
- Add flour, sugar, salt, and eggs
- Mix until smooth (about 5 minutes)
- Let dough rise for 1½ hours
- Roll out dough and spread with warm Nutella
- Shape into buns
- Let rise again
- Bake until golden brown
Notes
- Make sure your milk isn’t too hot
- Use room temperature eggs
- Don’t skip the rising time
- Warm the Nutella before spreading
- Keep some space between buns on the baking sheet
