Ingredients

For the Brioche Dough

  • ¾ cup (175g) whole milk
  • 3 tbsp (40g) unsalted butter, cut into small cubes
  • 2 tsp (9g) instant yeast
  • 3 cups (390g) all-purpose flour
  • ¼ cup (58g) granulated sugar
  • ½ tsp salt
  • 1 large egg, plus 1 large egg yolk

For the Filling

  • ½ cup Nutella spread

For the Raspberry Simple Syrup

  • ⅓ cup raspberry jam
  • 2 tbsp water

Instructions

  1. Heat milk and butter to 90°F
  2. Mix with yeast in a stand mixer
  3. Add flour, sugar, salt, and eggs
  4. Mix until smooth (about 5 minutes)
  5. Let dough rise for 1½ hours
  6. Roll out dough and spread with warm Nutella
  7. Shape into buns
  8. Let rise again
  9. Bake until golden brown

Notes

  • Make sure your milk isn’t too hot
  • Use room temperature eggs
  • Don’t skip the rising time
  • Warm the Nutella before spreading
  • Keep some space between buns on the baking sheet
