Instructions
Combine rolled oats, pumpkin puree, and milk in a bowl. Mix until smooth and creamy.
Add maple syrup, pumpkin pie spice, and a pinch of salt. Stir well to blend the flavors.
Let the mixture sit for a few minutes to allow oats to soak up the pumpkin flavor.
Portion the mixture into mason jars or airtight containers for easy storage.
Refrigerate for at least 4 hours or overnight to allow the oats to soften and flavors to meld.
Notes
Storage: Keeps fresh for up to 5 days in the fridge. For longer storage, freeze individual portions for up to 3 months. Thaw overnight in the fridge before serving.
Consistency Tip: Adjust milk amount for desired thickness. Add more milk if oats are too thick, or reduce it if they are too thin.
Custom Pumpkin Spice: Mix 2 parts cinnamon, 1 part nutmeg, 1 part ginger, and ½ part cloves for a homemade pumpkin spice blend. Add cardamom or black pepper for extra depth.
