Ingredients

  1. Rolled oats
  2. Pumpkin puree
  3. Milk (dairy, almond, oat, or any preferred milk)
  4. Chia seeds
  5. Maple syrup or honey
  6. Pumpkin pie spice (cinnamon, nutmeg, ginger, cloves)
  7. Pinch of salt

Instructions

  • Combine rolled oats, pumpkin puree, and milk in a bowl. Mix until smooth and creamy.
  • Add maple syrup, pumpkin pie spice, and a pinch of salt. Stir well to blend the flavors.
  • Let the mixture sit for a few minutes to allow oats to soak up the pumpkin flavor.
  • Portion the mixture into mason jars or airtight containers for easy storage.
  • Refrigerate for at least 4 hours or overnight to allow the oats to soften and flavors to meld.

Notes

  • Storage: Keeps fresh for up to 5 days in the fridge. For longer storage, freeze individual portions for up to 3 months. Thaw overnight in the fridge before serving.
  • Consistency Tip: Adjust milk amount for desired thickness. Add more milk if oats are too thick, or reduce it if they are too thin.
  • Custom Pumpkin Spice: Mix 2 parts cinnamon, 1 part nutmeg, 1 part ginger, and ½ part cloves for a homemade pumpkin spice blend. Add cardamom or black pepper for extra depth.
