  • 1 tablespoon vanilla extract
  • 2 tablespoons red food coloring

For the Cream Cheese Filling

  • 8 oz cream cheese
  • ½ cup softened butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preparing the Red Velvet Batter

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, sift together flour, cocoa powder, baking soda, and baking powder.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs, buttermilk, vanilla extract, and red food coloring to the creamed mixture. Mix well.
  5. Gradually combine the dry ingredients with the wet mixture, stirring gently until just combined.

Shaping and Baking the Cakes

  1. Line a baking sheet with parchment paper.
  2. Drop rounded tablespoons of batter onto the sheet, leaving space between each.
  3. Bake for 10-12 minutes or until a toothpick comes out clean.
  4. Let cool on the baking sheet for a few minutes, then transfer to a cooling rack.

Preparing the Cream Cheese Filling

  1. In a bowl, beat cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Assembling the Whoopie Pies

  1. Spread a generous amount of filling on the flat side of one cake.
  2. Top with another cake, flat side down, to form a sandwich. Repeat with remaining cakes.
