For the Cinnamon-Sugar Topping:

  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cut into cubes

Optional Butter Pecan Layer:

  • 1/2 cup pecans, chopped
  • 1/4 cup unsalted butter

Instructions

  • Preheat the oven:
    • Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
  • Make the Cobbler Base:
    • In a large bowl, combine flour, sugar, baking powder, and salt.
    • Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
    • Stir in the milk, vanilla, and egg until just combined. The batter will be thick.
    • Spread the batter evenly into the prepared baking dish.
  • Prepare the Cinnamon-Sugar Topping:
    • In a small bowl, combine granulated sugar, brown sugar, and cinnamon.
    • Sprinkle this cinnamon-sugar mixture evenly over the batter.
  • Add the Butter Pecans (Optional):
    • In a small pan, melt the butter over medium heat.
    • Add the chopped pecans and toast for 2-3 minutes, stirring occasionally, until fragrant.
    • Sprinkle the butter-pecan mixture over the cobbler before baking, if using.
  • Bake:
    • Bake for 30-35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
    • Let the cobbler cool slightly before serving.
  • Serve:
    • Serve warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream for added indulgence.
