  • Total Time: 10 minutes
  • Yield: About 2 ½ to 3 cups 1x
  • Diet: Vegetarian

Ingredients

Scale
  • 1 cup unsalted butter , softened
  • 4 cups confectioners sugar , sifted
  • 1 cup fresh strawberries , mashed
  • 1 teaspoon vanilla extract
  • 12 tablespoons heavy cream (optional, for consistency)
  • Pinch of salt (optional, for balance)

Instructions

  1. Prepare the Strawberries : Wash and hull your strawberries, then mash them into a pulp. You can use a fork, potato masher, or even a food processor to break them down. Set aside.

  2. Cream the Butter : In a large mixing bowl, beat the softened butter until it’s light and fluffy. This step is crucial for achieving a smooth, creamy texture.

  3. Add Sugar Gradually : Gradually add the confectioners sugar to the butter, beating continuously. Start with about half the sugar, then add the rest as needed. This helps prevent clumping and ensures a smooth consistency.

  4. Mix in Vanilla and Strawberries : Once the sugar is fully incorporated, add the vanilla extract and mashed strawberries. Mix until everything is well combined. The mixture should be thick and creamy.

  5. Adjust Consistency : If the frosting seems too thick, add a tablespoon of heavy cream at a time until you reach your desired consistency. Be careful not to add too much, as it can make the frosting too runny.

  6. Chill (Optional) : If you want the frosting to be firmer, transfer it to a bowl, cover it with plastic wrap, and refrigerate for about 30 minutes. This step is optional but can help the frosting hold its shape better when piping.

  7. Pipe or Spread : Once the frosting is ready, you can pipe it onto cakes or cupcakes, or simply spread it with a spatula. Garnish with extra strawberries if desired.

Notes

  • Use Fresh Strawberries : Fresh strawberries give the frosting its vibrant color and fresh flavor. If you’re using frozen strawberries, thaw them first and drain any excess liquid.

  • Adjust Sweetness : If you prefer a less sweet frosting, you can reduce the amount of confectioners sugar. Taste as you go and adjust to your liking.

  • Balance with Cream : Adding a little heavy cream can help achieve the perfect consistency. It makes the frosting smoother and easier to spread.

  • Refrigerate for Firmness : If you’re planning to pipe intricate designs, refrigerate the frosting for about 30 minutes before using. This will help it hold its shape better.
