Strawberry Cheesecake Quesadillas

Ingredients

  • 1/2 cup cream cheese, softened
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, diced
  • 4 flour tortillas (6 inch)
  • 2 tablespoons butter, softened
  • 1 teaspoon sugar (for topping)
  • 1/2 teaspoon cinnamon
  • Optional: strawberry sauce for serving

Instructions

  1. Take the cream cheese out of the refrigerator about 30 minutes before starting to ensure it’s properly softened.
  2. In a mixing bowl, combine the softened cream cheese, 2 tablespoons of sugar, and vanilla extract. Beat everything together until completely smooth.
  3. Wash and dice your strawberries into small pieces (about 1/4 inch cubes).
  4. Gently fold the diced strawberries into the cream cheese mixture, being careful not to crush them.
  5. Lay out two tortillas on a flat surface and spread half of the strawberry cream cheese mixture onto each one, leaving about 1/2 inch around the edges.
  6. Heat a non-stick pan over medium-high heat and add 1 teaspoon of butter.
  7. Once the butter has melted, place one prepared tortilla in the pan with the cream cheese side facing up.
  8. Take another tortilla, spread 1 teaspoon of butter on one side, and place it on top of the cream cheese mixture with the buttered side facing up.
  9. Cook for 2-3 minutes until the bottom is golden brown and crispy.
  10. Carefully flip the quesadilla and cook the other side for another 2-3 minutes.
  11. While it’s cooking, mix the remaining 1 teaspoon of sugar with the cinnamon in a small bowl.
  12. Remove the cooked quesadilla from the pan and immediately sprinkle with some of the cinnamon-sugar mixture.
  13. Repeat steps 6-12 with the remaining ingredients to make the second quesadilla.
  14. Let them rest for 2 minutes, then slice each quesadilla into quarters.
  15. Serve warm, possibly with strawberry sauce for dipping if desired.

Notes

  • A scoop of vanilla ice cream on the side creates an amazing temperature contrast.
  • Fresh whipped cream makes a simple but delicious topping.
  • Additional fresh strawberries or a mixed berry salad complements the flavors nicely.
