- 1/2 cup cream cheese, softened
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh strawberries, diced
- 4 flour tortillas (6 inch)
- 2 tablespoons butter, softened
- 1 teaspoon sugar (for topping)
- 1/2 teaspoon cinnamon
- Optional: strawberry sauce for serving
Instructions
- Take the cream cheese out of the refrigerator about 30 minutes before starting to ensure it’s properly softened.
- In a mixing bowl, combine the softened cream cheese, 2 tablespoons of sugar, and vanilla extract. Beat everything together until completely smooth.
- Wash and dice your strawberries into small pieces (about 1/4 inch cubes).
- Gently fold the diced strawberries into the cream cheese mixture, being careful not to crush them.
- Lay out two tortillas on a flat surface and spread half of the strawberry cream cheese mixture onto each one, leaving about 1/2 inch around the edges.
- Heat a non-stick pan over medium-high heat and add 1 teaspoon of butter.
- Once the butter has melted, place one prepared tortilla in the pan with the cream cheese side facing up.
- Take another tortilla, spread 1 teaspoon of butter on one side, and place it on top of the cream cheese mixture with the buttered side facing up.
- Cook for 2-3 minutes until the bottom is golden brown and crispy.
- Carefully flip the quesadilla and cook the other side for another 2-3 minutes.
- While it’s cooking, mix the remaining 1 teaspoon of sugar with the cinnamon in a small bowl.
- Remove the cooked quesadilla from the pan and immediately sprinkle with some of the cinnamon-sugar mixture.
- Repeat steps 6-12 with the remaining ingredients to make the second quesadilla.
- Let them rest for 2 minutes, then slice each quesadilla into quarters.
- Serve warm, possibly with strawberry sauce for dipping if desired.
Notes
- A scoop of vanilla ice cream on the side creates an amazing temperature contrast.
- Fresh whipped cream makes a simple but delicious topping.
- Additional fresh strawberries or a mixed berry salad complements the flavors nicely.
- A cup of coffee or hot chocolate makes this a complete dessert experience.
- For brunch, serve with a glass of mimosa or a fruit smoothie.
