Ingredients

  • 1 ½ cups regular milk
  • 10 to 12 slices brioche bread, cut into cubes
  • ½ cup granulated sugar
  • 4 large eggs, room temperature
  • ½ teaspoon salt
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 can 12 oz evaporated milk
  • 3 cups sliced strawberries
  • 8 oz cream cheese, cut into small cubes

Vanilla Icing

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 175°C and lightly grease a 9×13 inch baking dish with butter.
  2. Spread half of the brioche cubes evenly in the dish.
  3. Scatter the cream cheese cubes and sliced strawberries over the bread.
  4. Add the remaining bread cubes on top to create an even layer.
  5. In a large bowl, whisk eggs, granulated sugar, cinnamon, salt, vanilla extract, regular milk, evaporated milk, and melted butter until smooth.
  6. Pour the mixture slowly over the bread, making sure all pieces are soaked.
  7. Press the top gently with a spatula so the bread absorbs the liquid evenly.
  8. Cover and refrigerate for at least 2 hours or overnight for better texture.
  9. Bake uncovered for 45 to 50 minutes until the top is golden and the center is set.
  10. Let it cool for 10 minutes before adding icing.
  11. Whisk powdered sugar, milk, and vanilla until smooth, then drizzle over the warm bake before serving.

Notes

  • You can assemble the entire Strawberry French Toast Bake the night before and bake it in the morning
  • Use slightly stale brioche for better absorption
  • Cut cream cheese into small cubes so it distributes evenly
  • For a lighter version, reduce sugar slightly without affecting texture too much
  • A glass or ceramic baking dish works best for even heat distribution
