  • 1/2 cup (50 g) rolled oats
  • 1/2 cup (60 g) almond flour
  • 2 tablespoons (30 g) chia seeds
  • 1/4 cup (60 ml) honey or maple syrup
  • 1/2 cup (125 g) almond butter or peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (30 g) protein powder (vanilla or unflavored)
  • Pinch of salt

Instructions

  1. Prepare the dried strawberries: If the strawberries are very dry, soak them in warm water for about 5 minutes, then drain and pat dry.
  2. Process the base ingredients: In a food processor, combine the dried strawberries, rolled oats, almond flour, and chia seeds. Pulse until the mixture is finely ground.
  3. Add wet ingredients: Add the honey, almond butter, vanilla extract, protein powder, and salt to the food processor. Blend until the mixture comes together into a sticky dough.
  4. Shape the bites: Scoop out about a tablespoon of the mixture at a time and roll it into a ball. Repeat until all the dough is used.
  5. Chill and store: Place the energy bites on a plate or tray and refrigerate for at least 20 minutes to firm up. Once chilled, transfer them to an airtight container for storage.

Notes

  • Make sure the mixture is sticky enough to hold together. If it feels too dry, add a teaspoon of water or more almond butter.
  • Use wet hands when rolling the bites to prevent the mixture from sticking.
  • Chill the bites before serving for a firmer texture.
  • Store in small portions to make it easy to grab a quick snack.
  • Experiment with different dried fruits, like cranberries or mango, for unique flavors.
