- 1 cup (100 g) dried strawberries
- 1/2 cup (50 g) rolled oats
- 1/2 cup (60 g) almond flour
- 2 tablespoons (30 g) chia seeds
- 1/4 cup (60 ml) honey or maple syrup
- 1/2 cup (125 g) almond butter or peanut butter
- 1/2 teaspoon vanilla extract
- 1/4 cup (30 g) protein powder (vanilla or unflavored)
- Pinch of salt
Instructions
- Prepare the dried strawberries: If the strawberries are very dry, soak them in warm water for about 5 minutes, then drain and pat dry.
- Process the base ingredients: In a food processor, combine the dried strawberries, rolled oats, almond flour, and chia seeds. Pulse until the mixture is finely ground.
- Add wet ingredients: Add the honey, almond butter, vanilla extract, protein powder, and salt to the food processor. Blend until the mixture comes together into a sticky dough.
- Shape the bites: Scoop out about a tablespoon of the mixture at a time and roll it into a ball. Repeat until all the dough is used.
- Chill and store: Place the energy bites on a plate or tray and refrigerate for at least 20 minutes to firm up. Once chilled, transfer them to an airtight container for storage.
Notes
- Make sure the mixture is sticky enough to hold together. If it feels too dry, add a teaspoon of water or more almond butter.
- Use wet hands when rolling the bites to prevent the mixture from sticking.
- Chill the bites before serving for a firmer texture.
- Store in small portions to make it easy to grab a quick snack.
- Experiment with different dried fruits, like cranberries or mango, for unique flavors.
