- 3 cups fresh strawberries, roughly chopped
- ⅓ cup granulated sugar
- 16 ounces mascarpone cheese
- 12 ounces ladyfingers
- 21 ounces strawberry pie filling
- 2 cups heavy whipping cream
- 2 teaspoons vanilla extract
- ¾ cup powdered sugar, sifted
- 6 tablespoons vanilla instant pudding mix
Instructions
1. Prepare Strawberry Mixture
- Mix chopped strawberries with sugar
- Let rest 10 minutes, then mash
- Stir in strawberry pie filling
2. Make Mascarpone Mixture
- Whip heavy cream with vanilla until frothy
- Add powdered sugar and pudding mix
- Beat until stiff peaks form
- Fold in mascarpone in two parts
3. Assembly
- Spray 9×9 baking dish
- Quick-dip ladyfingers in strawberry mixture
- Layer: ladyfingers, strawberry mixture, mascarpone cream
- Repeat layers
- Chill 6+ hours

- Use room temperature mascarpone
- Let it chill completely
