Ingredients

Scale
  • 3 cups fresh strawberries, roughly chopped
  • ⅓ cup granulated sugar
  • 16 ounces mascarpone cheese
  • 12 ounces ladyfingers
  • 21 ounces strawberry pie filling
  • 2 cups heavy whipping cream
  • 2 teaspoons vanilla extract
  • ¾ cup powdered sugar, sifted
  • 6 tablespoons vanilla instant pudding mix

Instructions

1. Prepare Strawberry Mixture

  • Mix chopped strawberries with sugar
  • Let rest 10 minutes, then mash
  • Stir in strawberry pie filling

2. Make Mascarpone Mixture

  • Whip heavy cream with vanilla until frothy
  • Add powdered sugar and pudding mix
  • Beat until stiff peaks form
  • Fold in mascarpone in two parts

3. Assembly

  • Spray 9×9 baking dish
  • Quick-dip ladyfingers in strawberry mixture
  • Layer: ladyfingers, strawberry mixture, mascarpone cream
  • Repeat layers
  • Chill 6+ hours

Notes

  • Don’t oversoak the ladyfingers
  • Use room temperature mascarpone
  • Let it chill completely
