Ingredients
Scale
- 1 cup couscous
- 1 1/4 cups hot water
- 1/2 cup strawberry raisins
- 1/4 cup chopped mint
- 1/4 cup sliced almonds
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt to taste
Instructions
- Pour hot water over the couscous in a bowl. Cover and let sit for 5 minutes.
- Fluff the couscous with a fork and add the remaining ingredients. Mix well.
- Serve warm or at room temperature as a side dish.
